Ingredients

6 eggs
1 1⁄2Cupmilk
1Cupflour
3Tablespoongranulated sugar
1Teaspoonvanilla extract
1⁄2Teaspoonsalt
1⁄4Teaspooncinnamon
1⁄4Poundbutter (one stick)
2 apples (peeled, and thinly sliced)
3Tablespoonbrown sugar

Instructions

Preheat oven to 425º. In a blender or large bowl, mix eggs, milk, flour, sugar, vanilla, salt, and cinnamon until blended. If using a mixer, batter will remain slightly lumpy. Melt butter in a 12-inch fluted quiche pan or 9 x 13 baking dish in the oven. Add apple slices to baking dish. Return to oven until butter sizzles. Do NOT let it get brown. Remove dish from oven and immediately pour batter over apples. Sprinkle with brown sugar. Bake in middle of oven 20 minutes, or until brown. Serve immediately, and top with maple syrup, whipped cream, or vanilla ice cream as desired. Serves 6-8.
