A sweet beet salad!

| 1 1⁄2 | Pound | beets |
| 2 | Tablespoon | honey |
| 2 | Tablespoon | lemon juice |
| 1 | Tablespoon | prepared horseradish |
Cook and julienne or dice beets. Combine honey, lemon juice, and horseradish. Add to beets. Toss to coat. Cover and chill 6 hours or overnight. Adjust sweetness to taste.
