Cheese straws are the ideal combination of cheese and crunch. A bit of cayenne adds a little spice.

| 1 | Pound | sharp cheddar cheese |
| 4 | Cup | all-purpose flour (or half whole-wheat, half all-purpose) |
| 1⁄4 | Teaspoon | cayenne |
| 1⁄4 | Teaspoon | salt |
| 1 1⁄2 | Cup | butter (3 sticks) |
Grate cheese and set aside. Mix flour, salt, and cayenne. Add grated cheese and butter. Blend into flour mixture with fingers until pastry is yellow all the way through. Chill thoroughly. Roll out 1/4 of the dough at a time on lightly floured surface 1/8 to 1/4 inch thick. Cut into 3 x 1-inch strips. Place about 1/2 inch apart on an ungreased cookie sheet. Bake in a 350 degree oven for 10-12 minutes or until straws begin to brown very lightly around edges. Store tightly covered. Can be frozen.
