A basil based rub is used to cover moist salmon fillets and then covered in a lemon garlic sauce

| 1⁄2 | Cup | mayonnaise |
| 2 | Tablespoon | basil (fresh and chopped for sauce) |
| 2 | Tablespoon | garlic (minced) |
| 1 | Tablespoon | lemon juice |
Preheat oven to 350°. Grease baking pan with olive oil. Rub salmon pieces with chopped fresh basil and place in prepared pan with skin side up. Bake for 20-30 minutes, depending on the thickness of slamon. While salmon is baking, mix together sour cream, mayonnaise, basil, garlic and lemon juice. When salmon is done, remove and plate flesh side up. Serve with basil-garlic sauce.
Serve this dish with wild rice and a vegetable.
