| 1 | Cup | mushrooms |
| 2 | Tablespoon | all-purpose flour |
| 1⁄2 | Cup | light cream |
| 1⁄4 | Teaspoon | ground nutmeg |
| 2 | Tablespoon | onion (chopped) |
| 2 | Cup | chicken or beef broth |
| 1⁄2 | Teaspoon | salt |
| 1⁄4 | Teaspoon | pepper |
| 2 | Tablespoon | butter |
Slice mushrooms through cap and stem. Cook with onion in butter for 5 minutes. Blend in flour; add broth. Cook and stir until slightly thickened. Cool slightly; add cream and seasonings. Heat through. Serve at once.
