Vanilla and cinnamon add a wonderful flavor to this classic dish.

| 3 | Cup | flour |
| 1 | Cup | sugar |
| 1 | Teaspoon | cinnamon |
| 2 | Cup | milk |
| 3 | eggs | |
| 2 | Teaspoon | vanilla |
Combine flour, sugar and cinnamon. Add milk, eggs and vanilla. Beat with mixer until smooth. Dip bread in batter and fry on greased griddle until browned on both sides. Batter may be made ahead of time and stirred to reincorporate ingredients. Serve with butter and syrup or your favorite topping. Or eat plain.
