Irish soda bread made with oatmeal and buttermilk.

| 4 | Cup | whole-wheat flour |
| 1 | Cup | unbleached flour |
| 1⁄2 | Cup | oatmeal |
| 1 | Teaspoon | baking soda & salt |
| 2 | Cup | buttermilk (can use up to 3 cups) |
Mix dry ingredients very well. Stir in enough buttermilk to form a thick, but not too moist dough. Knead lightly in unbleached flour. For last bit of kneading, add a sprinkle of oatmeal and knead lightly. Form into a round and cut slits across the top with a sharp knife. Bake for 30-45 minutes at 375°.
I sometimes make 2 small loaves of round bread. The smaller loaves usually take about 30 minutes to bake, while the larger laof takes about 45 minutes.
