This Syrian meat dish is delicious. Made with finely cracked bulgur wheat and ground lamb, it makes a lovely Sabbath meal.

| 2 | Pound | ground lamb (can us ground beef) |
| 1⁄4 | Teaspoon | sweet basil |
| 1⁄2 | Cup | butter (melted) |
| 1⁄4 | Cup | pine nuts (FOR STUFFING) |
| 2 | Tablespoon | butter |
| 1⁄2 | Pound | ground lamb (can us ground beef) |
| 1 | onion (finely chopped) | |
| 1⁄4 | Teaspoon | allspice |
| Unknown | salt & pepper (to taste) |
Prepare stuffing in recipe provided. Cover bulgur with cold water and set aside for 20 minutes. Drain and press between palms of hand to remove excess water. Work onions and spices together, add meat and knead thoroughly. Add crushed wheat and conitue kneading. Dip hand in ice water while kneading in order to soften Kibbi. Divide mixture in half. Spread half in bottomo f a 9x12 cake pan. Spread tuffing over layer. Then spread remaining half of Kibbi mixture on top. (When spreading Kibbi layers, it is easier to take several large balls, pat flat and place in pan, piecing together to form an even layer.) Score top layer 1/2 inch deep and pour melted butter over top. Bake at 400° for 25 minutes. Lower heat to 300° and bake for 30 minutes more.
For Stuffing:
Brown pine nuts in butter until golden brown, then add meat and saute 10-15 minutes. Add onions and spices. Cook until onions are soft.
Delcious anytime. Serve with tabbouleh. Tabbouleh mix and bulgur wheat can be found in some grocery stores and in speaciality stores.
