This recipe is from the Frugal Gourmet. When you love to put lots of butter on your unleavened bread or matzo, and you'd like to cut down on the fat, try this.

| 4 | Tablespoon | lecithin (powdered) |
Mix with mixer. Refrigerate. Use as butter.
