Ingredients

1Cupsugar
3 egg whites
1⁄2Teaspoonbaking powder
1Cuppecans
16 Ritz crackers (crushed, or 2/3 cup Ritz Bits crackers)
1Teaspoonvanilla
  whipped cream

Instructions

Beat egg whites. Add sugar, baking powder, and vanilla. Fold in crushed crackers and chopped pecans. Bake in buttered pie pan at about 350º until firm and brown. Cool. Top with whipped cream.
