This light, crust-less pie has pecans and crushed crackers.

| 1 | Cup | pecans |
| 16 | Ritz crackers (crushed, or 2/3 cup Ritz Bits crackers) | |
| 1 | Teaspoon | vanilla |
| whipped cream |
Beat egg whites. Add sugar, baking powder, and vanilla. Fold in crushed crackers and chopped pecans. Bake in buttered pie pan at about 350º until firm and brown. Cool. Top with whipped cream.
