These hearty pancakes are so yummy with real maple syrup or fresh fruit

| 3⁄4 | Cup | rolled oats (quick-cooking) |
| 3⁄4 | Cup | oat flour |
| 2 | Tablespoon | sugar |
| 2 | Teaspoon | baking powder |
| 1⁄2 | Teaspoon | salt |
| 2 | egg yolks (beaten) | |
| 1 | Tablespoon | cooking oil |
| 2 | egg whites |
Heat milk until hot. Stir in oats and let stand for 5 minutes. Combine remaining dry ingredients in a mixing bowl, then add oat/milk mixture. Add egg yolks and oil. Beat egg whites until stiff peaks form, then fold into batter.
