Ingredients

4 baking potatoes
1Bunchscallions (or 1 onion)
1Tablespoonoil (or butter)
1⁄2Cupyogurt
1Teaspoonsalt
 Dashnutmeg
1⁄8Teaspoonblack pepper
1⁄2Cupchopped parsley
1Cupshredded cheese

Instructions

Scrub potatoes. Make shallow slits around middle as if you were cutting them in half lengthwise. Bake until done, 45-60 minutes. Meanwhile, saute scallions or onion in oil. When the potatoes are done, scoop out the insides and amsh while still hot with enough yogurt to make them fluffy. Mix in sauteed scallions, salt, nutmeg, pepper, parsley, and cheese. Return potato mixture to the jackets and bake them for another 20 minutes. Makes 8 stuffed halves.
