Sick of plain old baked potatoes? Well be sick no more, because this recipe is ready to spice your baked potato up to the next level of super flavor!

| 4 | baking potatoes | |
| 1 | Bunch | scallions (or 1 onion) |
| 1 | Tablespoon | oil (or butter) |
| 1⁄2 | Cup | yogurt |
| 1 | Teaspoon | salt |
| Dash | nutmeg | |
| 1⁄8 | Teaspoon | black pepper |
| 1⁄2 | Cup | chopped parsley |
| 1 | Cup | shredded cheese |
Scrub potatoes. Make shallow slits around middle as if you were cutting them in half lengthwise. Bake until done, 45-60 minutes. Meanwhile, saute scallions or onion in oil. When the potatoes are done, scoop out the insides and amsh while still hot with enough yogurt to make them fluffy. Mix in sauteed scallions, salt, nutmeg, pepper, parsley, and cheese. Return potato mixture to the jackets and bake them for another 20 minutes. Makes 8 stuffed halves.
