| 1 | Can | crushed pineapple (about 1 pound) |
| 1 1⁄2 | Cup | sugar |
| 4 | Tablespoon | lemon juice |
| 2 | Tablespoon | unflavored kosher gelatin (2 envelopes) |
| 2 | Cup | grated longhorn cheese |
| 2 | Cup | cream (whipped) |
| 1 | Cup | chopped nuts |
Drain pineapple; add lemon juice and enough water to make 1 1/2 c. liquid. Add sugar; boil until sugar dissolves. Soak gelatin in 1 c. cold water for five minutes; add to hot syrup, then refridgerate unitl mix starts to gel. Fold in cheese, nuts, pineapple, and whipped cream. Put in well-oiled 9-cup mold and chill. Turn onto large plate and garnish with lettuce, mandarin oranges, or strawberries if desired.
