Ingredients

1Cancrushed pineapple (about 1 pound)
1 1⁄2Cupsugar
4Tablespoonlemon juice
2Tablespoonunflavored kosher gelatin (2 envelopes)
2Cupgrated longhorn cheese
2Cupcream (whipped)
1Cupchopped nuts

Instructions

Drain pineapple; add lemon juice and enough water to make 1 1/2 c. liquid. Add sugar; boil until sugar dissolves. Soak gelatin in 1 c. cold water for five minutes; add to hot syrup, then refridgerate unitl mix starts to gel. Fold in cheese, nuts, pineapple, and whipped cream. Put in well-oiled 9-cup mold and chill. Turn onto large plate and garnish with lettuce, mandarin oranges, or strawberries if desired.
