Makes an excellent sandwich or just a simple salad...versatile is ALWAYS nice!

| 4 | Cup | chicken breast (cooked and diced) |
| 1 | Cup | crushed pineapple (drained) |
| 1 | Cup | chopped celery |
| 1⁄2 | Cup | shredded coconut |
| 1 | Cup | macadamia nuts |
| 3 | Teaspoon | curry powder |
| 3⁄4 | Cup | mayonnaise |
| mandarin orange slices (for garnish) |
Blend all ingredients with wooden spoon,. Serve as salad over Boston lettuce or serve stuffed in a tomato. Use Hawaiin bread if you want a sandwich. Garnish with mandarin orange slices.
Substitute chicken with your leftover turkey meat.
