Ingredients

1 head cauliflower (cut intoo 1/4-in pieces)
  zest and juice from one lemon
1⁄2Cupolive oil
1Tablespoonfresh oregano
1Teaspooncoarse salt
  freshly ground pepper

Instructions

Preheat oven to 450. In medium bowl mix the lemon zest and juice, oil, salot, and pepper. Add the cauliflower and toss until well coated. Spread evenly on baking sheet. Roast in the oven for about 12 minutes until cauliflower softens and browns around the edges.
