Ingredients

2Tablespoonextra virgin olive oil
1⁄2 medium red cabbage
1⁄3Cupwhite vinegar (or apple cider vinegar)
2Tablespoonsugar (rounded tablespoons)
1Teaspoonmustard seed
1⁄2Teaspoonsalt

Instructions

Slice carrots and cook until just tender. Draina nd add onions and green peppers. In a saucepan bring remaining ingredients to boil; then pour over carrots, onions, and green pepper. Serve warm and add salt.
