| 2 | Tablespoon | extra virgin olive oil |
| 1⁄2 | medium red cabbage | |
| 1⁄3 | Cup | white vinegar (or apple cider vinegar) |
| 2 | Tablespoon | sugar (rounded tablespoons) |
| 1 | Teaspoon | mustard seed |
| 1⁄2 | Teaspoon | salt |
Slice carrots and cook until just tender. Draina nd add onions and green peppers. In a saucepan bring remaining ingredients to boil; then pour over carrots, onions, and green pepper. Serve warm and add salt.
