This yummy omelette makes enough to serve your guests. They won't be disappointed with the taste either. Made with Jack cheese and tarragon, it's sure to be a hit!

| 1 | Cup | Monterrey Jack (grated) |
| 2 | Tablespoon | butter |
| 1⁄2 | Cup | half-and-half |
| 1⁄2 | Teaspoon | salt & pepper |
| 1⁄2 | Teaspoon | dried mustard |
| 6 | eggs | |
| 1 | Teaspoon | chervil |
| 1⁄4 | Teaspoon | tarragon (crushed) |
| 1⁄4 | Cup | green onion (minced) |
Spread Jack cheese in 9 inch baking dish. Dot with butter. Mix all remaining ingredients. Spoon over cheese. Bake uncovered at 325° for 40 minutes or until set.
This recipe is especially helpful when you're expecting company for brunch. The main course can be baking in the oven while you set the table and prepare the fruit bowl. However, it should be served immediately upon completiong of the prayer.
