A zesty blend of veggies and flavors, that will make your mouth water.

| 1 | large cucumber (burpless variety) | |
| 2 | vine-ripened tomatoes | |
| 1 | large sweet onion | |
| salt and pepper | ||
| 2 | Tablespoon | olive oil |
| 1 | Tablespoon | red wine vinegar |
| 1⁄2 | Teaspoon | dijon mustard |
| 1 | Teaspoon | fresh grated Parmesan (or Romano cheese) |
Chop cucumber, tomatoes and onion into bite-size pieces and toss together. Season with salt and pepper to taste. Combine the olive oil, vinegar, mustard, and cheese. Stir together until well mixed. Pour over the vegetables and let marinate until ready to serve. Double the olive oil, vinegar, mustard, and cheese if you like a "wetter" salad.
