Who doesn't love a simple, delicious one dish meal. This Roast can be made ahead, slow cooked and served with fresh vegetables

| 2 | Pound | chuck roast (high quality; can use up to 3 Lbs.) |
| 1 | Can | French Onion soup |
| 1 | Can | cream of mushroom soup |
| 1 | Teaspoon | salt & pepper |
| 3 | potatoes (cut into wedge or cubes) | |
| 10 | baby carrots |
Place roast in slow cooker. Add soups and sprinkle salt and pepper on top. Cook on low 6-7hrs. Potatoes and carrots may be added 1/5 hours before serving roast. Soups make a great gravy.
Variations - Omit vegetables and use 1 (8oz.) can mushrooms and 1/4 c. burgundy wine or purple grape juice.
