Ingredients

1 1⁄2Poundpasta
10Ouncefresh spinach
1⁄2Cuptoasted walnuts
2Cuplow-fat cottage cheese
1Clovegarlic (minced)
1⁄4Cupgrated parmesan cheese
1⁄4Cuploosely packed basil
1⁄2Teaspoonsalt
  ground black pepper (to taste)

Instructions

Prepare pasta according to stove-top directions. Wash spinach, drain excess water and blanch in a hot pot fo approximately 3-4 minutes. Put spinach, walnuts, cottage cheese, garlic, Parmesan cheese, basil, salt, and pepper in a blender/food processor and puree until smooth. Mixture will be bright green in color. When serving, toast extra walnuts for the top. Sprinkle with additional Parmesan cheese.
