| 1 1⁄2 | Pound | pasta |
| 10 | Ounce | fresh spinach |
| 1⁄2 | Cup | toasted walnuts |
| 2 | Cup | low-fat cottage cheese |
| 1 | Clove | garlic (minced) |
| 1⁄4 | Cup | grated parmesan cheese |
| 1⁄4 | Cup | loosely packed basil |
| 1⁄2 | Teaspoon | salt |
| ground black pepper (to taste) |
Prepare pasta according to stove-top directions. Wash spinach, drain excess water and blanch in a hot pot fo approximately 3-4 minutes. Put spinach, walnuts, cottage cheese, garlic, Parmesan cheese, basil, salt, and pepper in a blender/food processor and puree until smooth. Mixture will be bright green in color. When serving, toast extra walnuts for the top. Sprinkle with additional Parmesan cheese.
