Ingredients

2 bags baby spinach
1Poundfresh mushrooms (sliced)
1Bunchgreen onions (or purple onions, sliced)
  sliced tomatoes (if desired)
  imitation bacon bits

Instructions

Put spinach in a large bowl. Top with mushrooms, onions. tomatoes (if desired), and imitation bacon bits. Mix dressing in a plastic container and chill. Pour dressing on the salad right before serving. Use about 1/2 cup or to taste. It does not take a lot of dressing. Leftover dressing will last a week in the refridgerator.

Dressing

1/2 c. apple cider

3/4 c. oil

3 T. minced onion

1 tsp. celery seed

1 1/2 tsp. salt

1/2 tsp. dry mustard

1/2 c. sugar

Notes

May make a dressing of only apple cider vinegar, salt and pepper and white sugar.
