A colorful dish made with spinach and cottage cheese.

| 3 | eggs (slightly beaten) | |
| 1 | Tablespoon | flour |
| 1⁄2 | Teaspoon | salt |
| 1 | Dash | pepper |
| 1 | Cup | spinach (cooked, chopped, and drained) |
| 1⁄4 | Cup | sharp cheddar |
| 1 | Cup | cottage cheese |
| 1 | Cup | milk |
| 1 | pie crust |
Beat eggs together with flour, salt and pepper. Combine spinach and cheeses and place in pie shell. Mix milk, eggs and pour over spinach in shell. Back at 350° for 35 minutes or until crust is set and top browned.
You may subsitute other vegetables for the spinach.
