Crispy fresh coleslaw spiced up with Pepper Jack cheese.

| 2 | red peppers (medium) | |
| 1 | Package | coleslaw mix (16 ounces) |
| 2 | Can | red kidney beans (15 ounces each, drained and rinsed) |
| 1 | Package | pepper jack cheese (8 ounces, shredded) |
| 1⁄2 | Cup | zesty Italian salad dressing |
Cut spinach into strips 1/2 – inch wide. Cut peppers into thin strips. In large bowl, toss spinach, peppers, shredded coleslaw mix, kidney beans, cheese, and dressing. Makes 5 main dish or 12 side dish servings.
