Description

This authentic Thai dish is made with coconut milk, chicken, cilantro and Massaman curry. It's delicious!

Ingredients

1⁄2Cancondensed milk (FOR MARINADE: unsweetened)
2⁄3Cupshallots (minced)
2Tablespoonbrown sugar
2Tablespoonsoy sauce
1Tablespoongarlic (minced)
1Teaspooncumin and coriander
1Poundchicken breasts
1Cancoconut milk (FOR SAUCE: unsweetened)
1⁄2Cuppeanut butter
4Teaspoonbrown sugar (light; firmly packed)
2Clovegarlic (finely chopped)
1Tablespoonfish sauce (available at Oriental food markets)
1Tablespoonsoy sauce
1TablespoonMassaman curry paste (canned; available at Oriental food market or in the International section of grocery store)
1⁄2Teaspooncurry powder
1⁄2Cuphot water
2Teaspoonlime juice
 Unknownmarinated chicken pieces (FOR CHICKEN: cut into bite-sized pieces)
 Unknownpeanut oil
1 purple onion (finely chopped)
1 green pepper (finely chopped)
1Bunchgreen onions (white and some green parts; chopped up)
1 carrot (up to 2; finely grated)
1Packagepenne
 Unknownbean sprouts (fresh; to taste)
 Unknowncilantro (fresh; to taste)
 Unknownmozzarella cheese (or Parmesan; grated)
 Unknownpeanuts (unsalted, roasted; chopped)

Instructions

FOR MARINADE

Process milk, shallots, sugar, soy sauce, garlic, cumin, and coriander in a blender until smooth.  Place chicken in a shallow dish and add marinade.  Toss to coat, cover, and let stand in refrigerator for up to 24 hours.

FOR SAUCE

Combine coconut milk, peanut butter, brown sugar, garlic, fish sauce, soy sauce, cury paste, and curry powder in a medium saucepan.  Whisk in thoroughly 1/2c. hot water.  Simmer, stirrring occasinoally, over low heat until the flavors are well blended, 15-20 minutes.  More Massaman curry paste can be added for additional heat or flavor.  Removed from heat and stir in lime juice.

FOR CHICKEN

Saute chicken, onions, green pepper, green onions, and carrots in peanut oil, being careful not to overcook.  When chicken is almost done, add carrots.  In a separate pan, boil pasta.  when pasta is done, drain and put in pasta bowl.  Add chicken mixure and some of the sauce, more or less to suit your taste.  Add bean sprouts and cilantro to taste.  Top with mozzarella or Parmesan cheese and peanuts.
