Toasty Cheese Crackers

These tasty cheesy treats are fun for kids or adults.

Ingredients

1⁄2Cupparmesan cheese (grated)
1⁄2Cupbutter (softened)
3Tablespoonwater (cold)
1Cupflour (unbleached white)
8Ouncecheddar cheese (finely shredded)
1Cupoatmeal (either quick or old fashion)

Instructions

 

  • Beat together the cheeses, butter and water until well-blended.
  • Shape dough to form a 12 inch long roll.
  • Wrap and refrigerate at least 4 hours (I will often do this 3-4 weeks in advance of NTBMO and stick the refrigerator the day before I want to cook it for it to thaw). Cut roll into 1/8 inch slices. Bake on lightly greased cookie sheet in 400 degree oven for 8-10 minutes, or until edges are light golden brown. Immediately remove from cookie sheet and cool on wire rack.

I just made these, and they are super delicious. I added some cayenne pepper, and it gives them a delicious little kick!
