Slice the onions, carrots, peppers, tomatoes, celery, and mushrooms. Heat the oili n a large heavy pot, add the vegetables and saute for 10 minutes. Add the fresh vegetables, tomato paste, salt, and sugar with one cup of water. Cover and cook for 20 minutes. Mix the dumpling ingredients and form small sumplings with wet hands. Use a wooden spoon to make small wells in the vegetable stew and drop the dumplings in carefully. Cover and cook for an additional 20 minutes.
Dumpling Ingredients:
1 1/2 c. matzo meal
1 tsp. salt
1/3 c. water
6 tsp. oil
