| 1⁄2 | Pound | lean hamburger (or leftover roast beef, chopped) |
| 1 | large onion (chopped) | |
| 3 | ribs celery (chopped) | |
| 4 | carrots (cut in 1/2 in. slices5) | |
| 5 | beef boullion cubes | |
| 5 | Cup | water |
| 1 | Can | garden peas (15 oz.) |
| 1 | Can | tomatoes |
| 1 | bay leaf | |
| 1⁄2 | Teaspoon | garlic powder |
| 1⁄2 | Teaspoon | oregano |
| salt and pepper (to taste) |
In a heavy skillet combine beef, onion, celery, and carrots. Brown and drain if needed. Add water, boullion cubes, peas, tomatoes, and seasonings to a large soup pot. Add hamburger mixture. Bring to a boil, reduce heat to simmer; stir occasionally and simmer for one hour. Remove bay leaf before serving.
