| 2 | medium zucchini | |
| 1⁄2 | Cup | celery |
| 1 | onion | |
| 1⁄2 | Teaspoon | oregano |
| 1 | Teaspoon | salt |
| 16 | Ounce | stewed tomatoes (or fresh tomatoes) |
| 1 | Cup | shredded cheese |
| ground turkey (or ground hamburger, optional) |
Place thinly sliced zucchini in bottom of heavy skillet or pan. Sprinkle thinly sliced celery over zucchini, then add sliced onion. Add salt and oregano. Put tomatoes on top. Repeat for second layer if desired. Steam, drain off some juice, then top with some cheese and let it melt.
