Cheddar Crackers

Tasty crackers that are full of zest and flavor. They are a fantastic snack between meals.

Ingredients

1 cup butter (softened) 1⁄2 cup cheese (finely shredded Cheddar) 3 ounces cream cheese (room temperature) 1 tablespoon sun-dried tomato (minced) 2 teaspoons basil 2 teaspoons garlic powder

Instructions

In a large bowl, beat together butter and cheeses. Stir in flour, sun-dried tomato, salt and spices until well-blended. Mix until a soft dough forms. Divide dough in half. Cover and chill for an hour or so—just to firm it up a bit. Roll out to about 1/8” thick and cut into shapes. Bake 10-12 minutes or until light brown. Sprinkle with coarse salt if desired. Cool and store.

Notes

This dough can be made ahead of time and frozen until ready to bake.
