A flaky crescent roll with the tanginess of cottage cheese, and the dark sweetness of brown sugar.
In a medium bowl blend cottage cheese and 1 cup butter with a pastry fork. Sift in flour, and then blend until dough forms a ball. Put in the refrigerator overnight.
Heat oven to 400ºF. Grease 3 cookie sheets. Divide dough into thirds. On a lightly floured cloth, roll out one third of dough, 1/8 inch thick. Brush with some of the melted butter, sprinkle with ¼ cup of brown sugar, a little cinnamon, and ¼ cup chopped nuts. Cut circle into 16 pie-shaped pieces. Beginning at outer edge, roll up each piece tightly. Place point side down on a cookie sheet. Beat egg yolk with water. Then use to brush onto the crescents. Bake for about 20 minutes. Repeat with remaining dough.
