Gluten Free No-Bake Chocolate Cookies
Melt-in-your-mouth, yummy cookies! These will be perfect with a nice, tall glass of milk.
- 1 cup butter
- 1 1/2 cup white sugar
- 1/2 cup brown sugar (packed)
- 1/2 cup milk
- 4 tablespoons cocoa
- 1 pinch kosher salt
- 1/2 cup creamy peanut butter
- 2 teaspoons vanilla
- 3 cups quick-cooking oats (dry)
Put the butter, white sugar, brown sugar, milk, cocoa and salt into a 4-quart sauce pan. Bring all ingredients to a rolling boil and hold it at a boil for 1 minute. Do not boil for longer than 1 minute.
Remove the pan from the heat. Then add the creamy peanut butter to the hot mixture and stir in until melted.
Mix in the vanilla. Mix in the dry oats until they are completely coated with the mixture.
Drop cookies by the tablespoonfuls onto a wax covered cookie sheet. Let cookies cool until set.
