A lightly sweetened, crispy, coconut cookie. The dough can be made in advance so you can have freshly baked cookies in just a few moments.
Sift flour in bowl, cut in butter with a pastry fork. Add coconut, sugar, and egg; knead. Shape into a roll. Wrap in wax paper. Chill one hour. Slice and put on ungreased cookie sheet. Bake at 375º for 10-12 minutes. Remove immediately from pan when cooked and place on a cookie rack to cool.
