Maple Bar Cookies

A soft and delicious cookie with the warm flavor of maple frosting.

Ingredients

2 1⁄4 cups all-purpose flour 1 teaspoon salt 1 cup butter (or margarine, softened) 3⁄4 cup granulated sugar 3⁄4 cup brown sugar (packed) 1 teaspoon vanilla extract 2 eggs (large) 1 cup walnuts (chopped, optional) 1 pound powdered sugar 1⁄2 cup butter (softened) 1⁄2 cup cream cheese 4 ounces imitation maple flavoring   maple syrup

Instructions

Preheat oven to 375º. Combine flour and salt in a small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in nuts. Pour into ungreased 15 x 10 inch jellyroll pan. Bake for 20-25 minutes or until golden brown. Cool in pan on wire rack. When bars are completely cooled, cover them with maple frosting. Maple Frosting: Mix all ingredients together. Add powdered sugar and maple syrup as needed until you reach icing consistency. Mix ½ cup butter, ½ cup cream cheese and imitation maple flavoring. Add powdered sugar and maple syrup as needed until you reach icing consistency.  

Notes

These bars are better if covered and left overnight. The liquid in the icing soaks into the cookie part and it softens nicely.
