Ingredients
10 ouncesnestle mint chocolate chip morsels
3⁄4 cupbutter (softened)
1⁄3 cupsugar
1egg
1 teaspoonvanilla extract
2 1⁄4 cupsflour
1⁄2 teaspoonsalt
Instructions
Melt ½ c mint chocolate morsels over hot (not boiling) water, stir until smooth. Cool to room temperature. Set aside
In large bowl, combine butter and sugar; beat until creamy
Add egg and vanilla extract, blend well
Gradually add flour and salt
Place 1 cup dough in bowl
Add melted morsels and blend thoroughly
Shape chocolate dough into ball, flatten. (mixture will appear curdled) Cover with plastic wrap
Shape remaining dough into ball, flatten. Cover with plastic wrap
Chill until firm, about 1 ½ hours
Preheat oven 375° F
Between sheets of waxed paper, roll each ball of dough into 13 x 9 rectangle. Remove top layers of waxed paper
Invert chocolate dough on plain dough. Peel off waxed paper. Starting from the long side, roll up jelly style
Cut into ¼" slices, place on ungreased cookie sheet
Bake at 375 degrees F for 7-8 minutes
Cool completely on wire racks
Melt remaining 1 cup of mint chocolate morsels over hot (not boiling) water, stir until smooth. Spread flat side of each cookie with ½ slightly rounded teaspoon melted chocolate.
