Mint Chocolate Pinwheels

If you like mint chocolate chip ice cream, you will love these cookies!
Preparation time
30 minutes
Ingredients
10 ounces nestle mint chocolate chip morsels
3⁄4 cup butter (softened)
1⁄3 cup sugar
1 egg
1 teaspoon vanilla extract
2 1⁄4 cups flour
1⁄2 teaspoon salt
Instructions
- Melt ½ c mint chocolate morsels over hot (not boiling) water, stir until smooth. Cool to room temperature. Set aside
- In large bowl, combine butter and sugar; beat until creamy
- Add egg and vanilla extract, blend well
- Gradually add flour and salt
- Place 1 cup dough in bowl
- Add melted morsels and blend thoroughly
- Shape chocolate dough into ball, flatten. (mixture will appear curdled) Cover with plastic wrap
- Shape remaining dough into ball, flatten. Cover with plastic wrap
- Chill until firm, about 1 ½ hours
- Preheat oven 375° F
- Between sheets of waxed paper, roll each ball of dough into 13 x 9 rectangle. Remove top layers of waxed paper
- Invert chocolate dough on plain dough. Peel off waxed paper. Starting from the long side, roll up jelly style
- Cut into ¼" slices, place on ungreased cookie sheet
- Bake at 375 degrees F for 7-8 minutes
- Cool completely on wire racks
- Melt remaining 1 cup of mint chocolate morsels over hot (not boiling) water, stir until smooth. Spread flat side of each cookie with ½ slightly rounded teaspoon melted chocolate.
- Chill until set. Enjoy!
