New and Improved Fruit-Nut Bread

Ingredients

1 egg
1⁄3 cup extra-virgin olive oil
1⁄3 cup honey
1⁄3 cup orange juice
1 cup banana (mashed)
1 teaspoon vanilla
1 1⁄2 cups whole-wheat flour
1⁄4 teaspoon salt
2 cups oatmeal
1⁄3 cup dates (chopped)
1⁄3 cup apricots (dried, chopped)
1⁄3 cup cherries (dried)
1⁄3 cup prunes (or raisins, chopped)
1⁄4 cup black walnuts (chopped)

Instructions

Beat the egg. Add the oil, honey, orange juice, banana, and vanilla. Mix well. Add the whole-wheat flour and salt and stir just until moistened. Add the oatmeal, dates, dried apricots, dried cherries, prunes or raisins, and black walnuts. Stir until completely blended. Pour into well-oiled 9 x 3 x 5-inch loaf pan. Bake at 350º for about 50 minutes, or until a cake tester inserted in center comes out clean. Cool in pan about 10 minutes. Remove from pan. Finish cooling on rack. For easier slicing, store overnight.
