Oatmeal Snackin' Cake

Dense, moist and delicious oatmeal/coconut cake.

Ingredients

1 1⁄2 cups butter (softened) 3⁄4 cup brown sugar 3⁄4 cup white sugar 3 eggs 1 tablespoon vanilla 1 1⁄2 cups all-purpose flour 3⁄4 teaspoon salt 1 1⁄2 cups quick oats 1⁄2 cup chopped walnuts (optional) 1 cup coconut (sweetened, flaked)

Instructions

  1. Grease 9 x 12 pan, and preheat oven to 350 degrees.
  2. Cream butter and sugars.
  3. Add eggs and vanilla; beat well.
  4. In a separate bowl, mix remaining ingredients and then add slowly to the butter/sugar mixture, mixing well after each addition.
  5. Bake 30-35 minutes until golden brown around the edges.
  6. Sprinkle with powdered sugar and cool thoroughly.

It's great on day one...and terrific on day two!
