Onion, Cheese and Pecan Crackers

Crunchy and savory, these crackers are great during the Days of Unleavened Bread or anytime of the year.

Ingredients

24 ounces cheddar cheese (mild) 1 1⁄2 cups butter (soften) 1 teaspoon salt 3 tablespoons minced dried onion (or 1 large fresh Spanish onion, chopped) 1 1⁄2 cups pecans (chopped) 3 cups flour (whole wheat) 3⁄4 teaspoon paprika 3⁄4 teaspoon pepper

Instructions

Cream the butter till soft, then add the rest of the ingredients. Mix well and form into 3 rolls approximately 2 inches in diameter. Chill in refrigerator. When ready to bake, slice into 1/8- to ¼-inch slices. Place on slightly-greased cookie sheet and bake at 350 degrees for 10-12 minutes or until lightly browned around the edges. Remove from sheet and cool on wire rack. Makes about 6 dozen.
