Pecan Pie Mini-Muffins

Great as a sweet snack or an extra special breakfast, this crunchy muffin will make Unleavened Bread for kids and adults. This delicious muffins can be made gluten free.

Ingredients

1 cup pecans (chopped) 2 eggs (beaten) 3⁄4 cup brown sugar 1⁄2 cup flour (wheat, white, oat, or gluten-free rice) 1⁄4 teaspoon salt (optional) 1 teaspoon vanilla (optional)

Instructions

Preheat oven to 350. Mix dry ingredients together. Mix butter and eggs in medium mixing bowl. Add dry ingredients into butter mixture. Spoon into greased mini muffin pans. Fill 2/3 full. Bake for 20 minutes.
