Petticoat Tails (Shortbread Cookies)

Ingredients

1 cup softened butter 1 cup powdered sugar 2 1⁄2 cups flour 1⁄4 teaspoon salt 1 teaspoon vanilla

Instructions

Mix together softened butter, sugar and vanilla.  Stir flour and salt together; then add to butter mixture.  Stir until thick; then mix with hands because of stiffness. Place on wax paper and shape into a long roll.  Wrap with wax paper and refrigerate until very firm - several hours or overnight. Cut in thin slices (1/8 inch thick.)  Place about 1 inch apart on ungreased cookie sheet. Bake at 400 degrees until slightly brown (about 8-10 minutes)
