Toasty Cheese Crackers

These tasty cheesy treats are fun for kids or adults.

Ingredients

1⁄2 cup parmesan cheese (grated) 1⁄2 cup butter (softened) 3 tablespoons water (cold) 1 cup unbleached white flour 8 ounces cheddar cheese (finely shredded) 1 cup oatmeal (either quick or old fashioned)

Instructions

Beat together the cheeses, butter and water until well-blended. Stir in flour and oats. Shape dough to form a 12-inch long roll. Wrap and refrigerate at least four hours (I will often do this 3-4 weeks in advance of NTBMO and stick in the refrigerator the day before I want to cook it for it to thaw). Cut roll into 1/8 inch slices. Bake on lightly greased cookie sheet in 400 degree oven for 8-10 minutes, or until edges are light golden brown. Immediately remove from cookie sheet and cool on wire rack.
