Soften butter and beat until very fluffy. Mix all the dry ingredients together and then add them to the fluffy batter. Mix well. Add the egg and mix well. Then add vanilla, carrots, zucchini, raisins and nuts. Mix. Chill about 2 hours as the dough is very soft. Drop about a teaspoonful of dough on ungreased cookie sheet. Bake at 375º about 10-12 minutes but watch carefully because the bottoms of cookie burn easily. While warm dip in powdered sugar.
